I have a dream that we can design a set of connected course experiences for youth, centered around their interests. I've been running experiments along these lines for several years now, and it feels close to being in reach. For my food order - I have been working with my foodie son to imagine our upcoming Thanksgiving feast. We are currently exploring some kind of a raw or cured fish appetizer. He insists that we have to test all the options before the actual feast. Last night we shucked some raw oysters from our local farmers market. Not bad. What do you folks think of trying out the other options we are considering at the moment? 1) Smoked salmon wrapped with chives in lightly pickled thin slices of daikon radish or 2) Seared bonito sashimi with ponzu and fried garlic chips. Which sounds tastier??
